Come Watch the New Harvest!

Holiday Festivals!

Wow…Halloween just passed and we are already thinking about holiday shopping! Is it just me or do we start celebrating our winter holidays a little too early? I guess I can’t complain too much because I love love love this time of year! You just won’t find me puttin’ up my Christmas decorations quite yet!

Another sign of the season would be all these wonderful craft and holiday festivals! They are such a great excuse to get out of the house on the weekends! My first festival was this past weekend at Standley Lake High School in Westminster. Now, I would have announced this earlier but I barely had time to get myself together in time for opening day! You should just be happy that I managed to show up with my hair washed and my clothes intact! Boy was I a hot mess last week! Another reason for my madness was setting up at the Cherry Creek Mall. We will be showcased for the next 2 months so you can stock up on all your holiday goodies! We will be located in the store across from Neiman Marcus so check it out folks!

So…I am here to finally update my favorite honey lovers on this weekends holiday show. Come visit me at the Highlands Ranch High School on Sat 10:00-5:00 and Sun from 11:00-4:00. There will be lots of food, crafts, fudge, holiday decor, fudge, kettle corn, jewelry, gift ideas, fudge and your favorite honey girl! You can come bring me some fudge if you want!! I won’t mind!

I will also be at The Ranch on the 20th and 21st which is located at the Budweiser event center in Loveland. I’m sure there will be fudge there too! So all in all you have no excuse to not stock up on your favorite Beeyond the Hive products! We will also be debuting Jamie’s newest candles! They are awesome and I am kinda tempted to hoard them all for myself…but I won’t! I hope to see you over the next couple of weekends! I love hugs, fudge and honey so come on by:)

Crested Butte People’s Fair

A friend of mine stopped by my honey house the other day as I was packing up the truck, heading for another festival to sell some of the sweet, sticky stuff.  “Why do you even bother with those festivals anyways?  You have to pack up all your products, spend the money on fuel, go through the headache of setting up the tents & tables and you never know what sort of unpredictable weather you might be in for…not to mention all of the CRAZY people you have to deal with ALL DAY LONG…”
 
To him I say “pish-posh” & I truly hope he see’s this blog & how happy my “peeps” are to stock up on their yummy honey year after year.
 


Yep, a little honey love makes the world go round!


 This is one of our most favorite customers “Crazy Elaine”.  We affectionately call her “Crazy Elaine” because she is crazy about our beeswax lotion.  So much in fact, she comes to the same festival EVERY YEAR just to see us & stock up on her favorite lotions.  We love Elaine so, so much & her enthusiasm & positive energy alone is worth the trip to Crested Butte every year.
 
This girl was the cutest “hustla” I’d seen in awhile.  She loved honey, but didn’t have any money so, to use her words she offered to “walk my puppy for a pounder.”  How could I deny such a cutie pie?

All in all, it was a fabulous festival & I can’t wait to do it all again next year.
 
I’ll even bring my puppy back just in case the cutie pie hustla comes back.  I fully support young entrepreneurs!

Corn Fritters!

Can you recall a “special” recipe that you grew up with that always put a smile on your face? Well, for us, that would be CORN FRITTERS! I guess they are kind of like apple fritters (although I’m not sure if I’ve actually ever had an apple fritter) but these are seriously amazing! I have never tried to make them myself…until last night. I geared up and bought myself a deep fryer and thought that I was gonna give it a try! Once I snagged the recipe from my sis-in-law I realized how vague it was! Oh boy…I am just beginning to cook and don’t quite have the confidence in my improvisation skills yet! At this point I stick to the recipe, follow every direction and hope for the best! Well, that wasn’t gonna cut the mustard this time with my mom’s ambiguous recipe so I rolled up my sleeves and gave it a whirl!

Here is my new fryer! I decided to get a “cheaper” one until I know how to use this sucker! It worked perfectly and it really is a “cool daddy”! 

 These are the ingredients. This is all you need to get a little closer to yummy goodness!

1 can of corn……….1 egg……….milk……….1-1/2 cups flour…….2 tsp baking powder……….3/4 tsp salt 

Step 1) Drain 1 can of corn and put into a measuring cup. You see 2 cans in the picture above but that was my “backup” can in case I messed anything up!

Step 2) Add enough milk to make a cup. Well…my corn surpassed the 1cup mark so I just added enough milk to reach the top of the corn. Just add some milk now and you will see that I added more later!

Step 3) Sift together 1-1/2  cups of flour, 2 tsp baking powder, and 3/4 tsp salt.

 Step 4) Beat the egg…beat it like you mean it!

 Step 5) Combine beaten egg to the milk and corn mixture.

Step 6) Add to dry ingredients and stir until moistened.

This is when I noticed that I didn’t have enough milk to create a creamy batter.

So add more milk to make your batter look this this!

Not too runny and not too thick. Almost like a pancake batter!

Step 7) Deep fry time! Just spoon some batter into your deep fryer. I was a little nervous at this point because I didn’t know how much to put in or if the batter would even hold together! Just play around with it but it was easier than I thought! If I can do it you can too!

You want these lil fritters to fry until they are a deep golden color. The first couple of fritters I fried weren’t completely done in the middle so I made sure they were nice and crispy!

Once they are all crispy place on a plate with a paper towl so any excess oil can drain. Don’t these look yummy! 

Now…you are probably wondering what this has to do with honey…well, it may sound weird but you put honey on top just like a biscuit! I think I ate so many before dinner that I was completely full! I love me some corn fritters and I think you will too!

This is perfect for the fall and the boys will love em too! It is so easy and I’m glad I gave it a try!

Chapstick, Lip Balm, Lippy Lip…you catch my drift?

Well folks we are heading into fall and I couldn’t be more excited. This honeygirl loves sweaters and boots and curling up with a cozy blanket! This is just one of the many differences that my sister Jamie and I share! She loves warm weather…I hate warm weather. Jamie hates the cold weather…I love the cold weather! Yes we are siblings by blood (although I wonder sometimes just as I’m sure she does the same!).

Anyhow, back to my story. I’m not sure if any one else goes through this but when there is a change in seasons I always have to start a new project! Well, this season has brought me to creating the most perfect lip balm! Call it what you want…I prefer lippy lip…but I am itching to work on some good recipes for your chapped lips!  Here in Colorado the cold air brings dryness to my skin and lips. A girl can’t put enough lotion on and I find myself putting on chap stick every second of the day. I can’t leave home without some sort of lippy lip. I can never settle on a “go to” lip balm so I constantly buy new ones trying to find my perfect lip-mate! We found the perfect lotion recipe (click here to try it)  but now we just have to come up with a great lippy lip/ lip balm/ chap stick!

Can you believe that ALL of these lip tubes were found either in my truck or my purse? Can you imagine what it would look like if I roamed around the house? Looked in other purses and or bags I might have? Stay tuned…I might just spend my Friday night looking for every tube of chap stick I own! Now don’t get me wrong. I kinda like some of these lip concoctions. They go on my lips nicely and look quite pleasant afterwards…at least I think so. But they all leave my wonderful, kissable, luscious lips feeling even more dry and cracked than when I started! I am determined to solve this world crisis! It’s an epidemic really! Here at Beeyond the Hive we are out to provide solutions to this worlds toughest dilemmas! BTH wants to answer the tough questions…20/20 style!

Well I guess I have my friday night all scheduled out! First I will tune into MSNBC to watch my favorite show Lockup, look for all my lippy lip I have purchased within the last 28 years, give my manmeat a quick update on my madness, hang out with my in-laws, and start concocting some lip balm recipes! I’m kinda wild can’t you tell? I’m gonna do it! You just watch and see!

Everybody Loves Rocky Ford Produce!

Who can resist a Rocky Ford cantaloupe? My whole family used to reside in the small farming town of Rocky Ford. Not much there really.  You can call it a podunk kinda town. In fact that’s were I spent the entire first 18 years of my life.  The one thing the Arkansas Valley has going for itself is being known as the MELON CAPITAL OF THE WORLD! So it’s only natural I grew up on those luscious melons and without our bees there would be NO MELONS! I repeat…NO Rocky Ford melons!

 My favorite produce stand in that area is Knapps Farm Market which is located on the corner of US 50 and Highway 71 just west of Rocky Ford. The Knapps family have been selling our honey for many many many years! Ever since I could remember I was making deliveries in the summer time to stock their shelves and to take home as much produce that I could! They are family owned and operated and I love how you can always spot a few of the family members working each and every summer! The Knapps Market is also known for their variety in produce. They offer homegrown okra, eggplant, numberous varieties of cucumbers and pickles, tomatoes, honeydew, watermelon, cantaloupe, sweet corn and several other tidbits of produce…including Beeyond the Hive products!

 

Ohhh how I love these sweet sweet melons!

 

 And these too! I’ll take them all!

 

I bought some of these…cut them, threw them in a pan with honey and my in-laws now love me a little bit more!

They are open daily from 8 a.m. to 7 p.m. If you are in the area you better stock up before they close in October! Remember to not only support your favorite beekeepers (us of course!) but also your local farmers! We need you…really! We can’t do this without you! We work oh so hard to feed you so get your cute lil hiney over to your nearest produce stand! Oh…and if they don’t have Beeyond the Hive honey you should kindly request it:) We won’t mind!
